Unfortunately that doesn't work, at least not in my case (maybe an
acciaccatura's slur behaves differently from a normal one?).

In the attachment you can see that the slur still aligns to the center
of the note head. Moreover I feel that the override doesn't work as
expected: First attachment is overriding positions to #'(0 . -4.466),
second to #'(0 . -4.467). Suddenly there's a "leap", and it isn't
possible to get a horizontal slur that way (also the first position
doesn't seem to matter).

That seems like a nice idea. Did you look into \shapeII for that? I
don't know if it provides such a feature directly, but it will surely
offer you functions to significantly improve the user experience,
specifically I'd look for the "polar coordinates" approach.
