newbie question

Hello,
I am new to CVS and trying to figure out the proper way to deal with out
code and checking it in and out of CVS.  Most of the stuff we'll be putting
in CVS will be web-based files, like html, php, etc.
So here's the question I have...  what do we do for our working web
directory?  Is the "proper" way to do that:
import it into CVS
delete the current htdocs directory
check a copy out of CVS, into the apache directory (and run from that)

And then whenever there are updates, just do a cvs update on the "working"
copy?

Also, how do you tell cvs to not recurse directories when you're doing an
import?  I had thought that the -l flag would do this (it's listed in common
commands), but cvs seems to complain when I do that...
