Many professional writers do use TeX and troff.  If the traffic on the
lout users mailing list is any indication many are using lout too.  I've
met several, though of course they've all written books in the computing
field.  Lots of people for whom wordsmithing is core to their primary
business, such as lawyers, use such tools too.  There are lawyers on the
lout list and I personally know two lawyers here in Toronto who've long
used troff for all the needs of their practices.  And then of course
there are AT&T's patent lawyers who were probably the first non-computer
professionals to use not just troff, but unix too.
