I presume thats a no on a interface binding option. 
Atm I already have a chain in place. But, I would 
prefer the cvs-server process -not- to even listen on 
the second interface. 
I might do a inetd jail;)

You can do this using ip filtering.  Check out ipchains or iptables 
which is OT.
