Ah, indeed, that's it.  Then I don't get an error with
LaTeX-install-toolbar, and even this formerly unknown
LaTeX-symbols-active-menuitem pops into being which I've just defvar-ed
without value in order to silence the byte-compiler.

I don't actually understand how to use this thing.  I do have new
toolbar buttons with descriptions "Turn on/off the toolbar of LaTeX
symbols" and "Select a class of symbols to be displayed" and values such
as "Greek Uppercase" but don't see how my selection would affect
anything.  I would expect to be able to select Greek uppercase letters
now somewhere...
