My personal advice (such as it is).

If you purchase HP printers with the postscript option and set the
emulation mode to automatic you should manage to get WP 5.1 running with
a PS driver.

If WP 5.1 is a mission critical application then there should be no
problem in purchasing the required printers as it will cost less than
paying you to fiddle about all day.
