It is possible to do this, it would take a bit of work.

One possible solution would be to create a log file when you start a rollout,
"gnubg_rollout_" with the details of the saved file, this file is deleted
when the rollout finishes normally. On startup we would need to check for any
files with names like this and see if the gnubg process is still running. Then
a list of unfinished rollouts could be shown/continued etc.

Something for the todo list anyway...
