A text file is fine of course, but they lack useful features such as
including images (e.g. screenshots).  You would need some markup for
that, and Org-mode happens to have solid built-in support.

Agreed.

I don't think so, no.  I'm just saying that you can do what we do with
the org manual, so you get to write Org-mode, but still get to read in
'M-x info'.
