I've had the same problem with a Snap server (a relatively low-end file
serving appliance that serves up both Windows and NFS views of its files).

When opening files in emacs from the windows side, things often got
truncated.

The Snap stunk in various ways and I haven't had the problem with other
file-serving apparati so I assumed the problem was theirs.  My speculation
at the time was that Emacs is using some nonstandard method for determining
file size, and that this weird mechanism wasn't implemented properly on the
Snap.
