We call it spoofing and it does suck. For what it's worth, here's an article on it:

We have sometimes lost considerable connectivity and productivity by being blacklisted (that is the entire University of Texas -- including the 70,000 current faculty, staff, and students and also past employees and students) due to this spam technique.

It can be a BIG headache.

As others have noted in this thread, the better news servers now hide the address in such a way as to make grep searches somewhat more difficult for address harvesters. It works for us--for now.
