Does Lilypond do split hands?
What do you mean? Take a look at the examples in
http://lilypond.org/stable/input/test/out-www/test.html
to get an idea of some of the capabilities of Lilypond.
Also, how come Lilypond doesn't convert:
Mariage D'Amour.mid properly. It doesn't look right.

Converting MIDI to something you can typeset is a tricky business in
general and when it comes to Lilypond, the tool midi2ly is fairly
simple. I have not heard of any Lilypond user who have use MIDI input
for anything more serious, since inputting the file directly is often
just as quick as first sequencing it.
One specific problem with your file is that it only contains a single
track and a single channel. midi2ly makes separate staves for each
track in the MIDI file and separate voices for each channel.
See also the comments on midi2ly in the Reference Manual.
