[Ltib] Build Linux Kernel and Filesystem on Portable Ubuntu

Hello guyz,
I'm planning to install ubuntu linux on my computer at home because i want to familiarize Linux commands and help me build a right kernel configuration and filesystem to my LPC3131 board. But the problem is I don't want to have a dual boot of my computer at home, because i like to work more on windows right now. So im planning to use a portable Ubuntu that would run on top of windows OS.
My question is, have anyone here experience using LTIB on portable Ubuntu? Does work perfectly? Does the built Linux kernel for you development board works perfectly?
Hope someone could tell me about there experience in portable Ubuntu.
