Im trying to do something similar for my final thesis. I use a bluetooth 
enabled mobile phone instead.
 
I already got working a simlpe dummy client application communicating with a 
server application (both written in Java on Win PC Plattform. Of course all the 
networking stuff is contained within Windows. But I guess (or hope for my 
thesis) this will work with lwIP too. At least I found no strange LCP 
negotiation between the Win PC and the mobile phone.
 
I just used the AT+CGDCONT command to set the GPRS APN and the
ATD*99***1# or somthing like this to open a GPRS connection.
 
But unfortunately I didnt make more experiences, since I first have to port the 
lwip ppp stuff to my single threaded environment.

Does anyone have any sample application code to use
PPP with a GSM Modem (Wavecom) to establish a GPRS connection?
