Thanks for the report.  Can you give a little more information:

1. How did you install Octave 6.3.0 and 7.0.90 (and other versions)?

2. What Linux do you use?

3. Can you print the content of the pinned .desktop file?

Maybe a mixture of Flatpaks or snaps might be involved in mixing up .desktop
files.
