Autoconf manual http://www.gnu.org/software/autoconf/manual/autoconf.html#C-Compilersays about AC_PROG_CC: "If |CC| is not already set in the environment, check for |gcc| and |cc|, then for other C compilers". AC_PROG_CC takes a list of compilers as first argument so if you wanna change the default behaviour, it should be straightforward except that it's not obvious to me how to decide which type of cat the OS is...
