I'm not familiar with what a complex-in Hilbert block would do, but you can easily demodulate SSB using a bandpass filter — use the block gnuradio.filter.fir_filter_ccc, and gnuradio.filter.firdes.complex_band_pass to design the filter, with your choice of lower and upper audio frequency limits.
