I've cross-posted to discuss-gnuradio, since this isn't really the "teach myself gnuradio" mailing list.

You've disabled your USRP source, the "real" output of your complex-to-real is going to a file sink that is configured for complex-float.  Your source refers to a variable,
  "gain" that doesn't exist within your graph.

You should probably spend a bit more time with Gnu Radio tutorials.
