Would allowing a regexp solve the expression \alpha-\beta, \alpha+\beta, \alpha/\beta, so that \alpha and \beta are prettified seperately?


That's not necessary.  Just follow Stefan's advice:

            (prettify-symbols-mode)))

This does what you want.
