Actually, this isn't centered. But the implication is that it is. \Since \hcenter aligns the center of an object with the left edge of another, the example in the documentation doesn't do a very good job of showing the text "centered" having its center on the left edge of the ↓, because the ↓ is so narrow. If anything, the example should be
\markup {
  \column {
    ↓
    centered
  }
}

That way it's clear that the center of the arrow is aligned with the left edge of the text. Although, that example is possibly more confusing than the current one.

I still think that for showing the various alignment options, columns and rows of "one" "two" and "three" are better.
