the --force-gui option is not required. There are the following caveats
though. If the user has an octave alias for 'octave --no-gui' (like I do),
then the menu entry will open the terminal window to then start the gui
anyway. Adding the --force-gui to the desktop entry, in conjunction with
having an octave alias for --no-gui will have the menu entry silently fail.
On a slightly related note, I also added the text/x-octave and text/x-matlab
to the mime types supported by Octave. As part of a desktop the install, we
will now rebuild the system mime database. See
