Follow-up Comment #5, bug #56797 (project octave): I always run on current Fedora. I normally run "Gnome on Xorg" desktop. I just tried default "Gnome" (which is on Wayland) and Plasma (presumably on Xorg). I do not see this problem with octave on either of those. I think when you run octave over ssh it uses software rendering for plots. So you may try to start octave as LIBGL_ALWAYS_SOFTWARE=1 octave on a local machine and see if that helps.
