When I did an internship a decade ago in the US, the contract also had this
clause that anything I wrote during my time there (even in my spare time, on
my own computer etc.) would be long to the company. Right before signing, I
talked this over with the responsible person there, and we added a disclaimer
that any work done on some explicitly listed projects were explicitly excluded
from that clause. That was absolutely no problem for them, and I had the legal
certainty that I could work on it without fear. I can't imagine that this
would be a problem for any university, either.
