But if they are intended to be equipped with frets, I would likely be
bying "unbundierte" fretboards as contrasted to "fretless" ones.

That would be in English "unfretted" as opposed to "fretless".

I really think that "bundiert" is referring to the completion of a
process, not as a classification of the resulting instrument.

I really now _must_ find some other hairs to split, or I'll get all
excited.
